Thanksgiving #2

Ok, better post something before it gets too late.

Just going to list out what we had

Turkey (of course) about 18 pounds we raised it in the yard haha
Cranberry sauce - Homemade, I usually make it, its just one bag of cranberries simmer in 1/2 to 1 cup water with 1/2 cup honey until thick.
Rice Stuffing - First time making it, Ill always make it now, it was sooooo good :)
Inside-out pumpkin pie and regular.
Gravy thickened with a mixture of rice flour and potato starch.
Cranberry Bread
Pumpkin Bread
Creamed Corn
Boiled Turnips
Mashed Potatoes
Sweet potatoes with a bit of cinnamon and honey

umm, I think thats about it.

Thanksgiving #1

Im sure I will post more after the fact but heres what I've done so far...

I tried rice dressing for the turkey this year. I made one batch last night and one this morning, its very good even before its baked lol.

The recipe is pretty simple, had to sub a few things like using walnuts instead of pecans and olive oil instead of butter. (Well theres a few pecans in there I didnt have enough hah)

Venison for dinner

This afternoon my dad was able to get a deer and now we are feasting!
I put some salt and cayenne pepper in it is all. I find that a little cayenne pepper, I mean a little, tiny bit, helps boost the flavor a bit so that's why I use it on meat sometimes. I just put a dash here and there and thats all.
Yummmm! :)

Last night's dinner

Last night I had some fun!
I made dinner for the family, had no idea what I was going to make at the time. :)
When I started I told my sis that dinner should be ready in a hour.

I started some rice, just put a whole bag of brown rice in the pot and put some water in ( I dont measure the water and rice anymore, sign of true skill, right? ^_^)
Then I started with an onion in another pot, some garlic, then sliced carrots, chicken breast, potato wedges, and lastly some frozen broccoli. (all veggies were from raw except the broccoli)
I kept adding water so it wouldnt dry out. Spices included salt, lemon pepper and basil (have no idea what the basil did lol)
Anyways it was ready and my bro said hah! exactly an hour. He looked at his watch when I said it would be an hour and it was 9:40 he looked again when it was done and it was 10:40. hehe. ^_^ Pretty good eh?

Columbian Rice

This is a simple recipe I got from a friend years ago.
I make it all the time for a quick breakfast.

You need:
Rice, Leftover is best, but you can make it with fresh made, I use long grain brown rice almost exclusively, but white rice works fine as well. Oh, for one serving you'll need about 2 cups of cooked rice.
1 to 2 eggs, depending on how you like it.
Olive oil
about 1/4 cup cold water (optional)

Heat some oil in a pan. Break up rice to make it easier to measure (if you are measuring it) and place in the pan. If your rice is a bit dry from sitting in the fridge overnight, add the water and stir to re-hydrate the rice a bit. After the water is absorbed, add the egg (beaten or not) and mix thoroughly. Stir occasionally, until egg is cooked. Season to taste with salt and pepper.

Recipe: Carrot Salad

No, it's actually a wonderful side dish!
Sweet and crunchy, this salad is a quick and easy dish.

About 3 fresh carrots, grated (medium)
handful of chopped walnuts, pecans, sliced or slivered almonds. (about 1/4 cup or so)
handful of raisins
teaspoon or two of honey
orange juice (I normally just pour in whatever I think is enough, I'd say it takes approximately 1/3 to 1/2 cup for this amount)

Mix all ingredients in a bowl.
Stir a bit before serving each time, as orange juice collects in the bottom of the bowl.

Serves about 4 to 6, depending on how much you like it! ^_^ Yum!
