Columbian Rice

This is a simple recipe I got from a friend years ago.
I make it all the time for a quick breakfast.

You need:
Rice, Leftover is best, but you can make it with fresh made, I use long grain brown rice almost exclusively, but white rice works fine as well. Oh, for one serving you'll need about 2 cups of cooked rice.
1 to 2 eggs, depending on how you like it.
Olive oil
about 1/4 cup cold water (optional)

Heat some oil in a pan. Break up rice to make it easier to measure (if you are measuring it) and place in the pan. If your rice is a bit dry from sitting in the fridge overnight, add the water and stir to re-hydrate the rice a bit. After the water is absorbed, add the egg (beaten or not) and mix thoroughly. Stir occasionally, until egg is cooked. Season to taste with salt and pepper.
